Dinner: Part 1

*Ah! I just realized that I posted Dinner: Part 2 before Part 1!  Here’s Part 1!*

I planted a load of Swiss chard, now it’s my mission to find something to do with it all.  Swiss chard is not the tastiest of leafy greens, it’s a little bit astringent.

This, however, is a quick and easy way to make a tasty side dish with that Swiss chard lurking in your fridge.

Sautéed Swiss Chard

3 cups Swiss chard, chopped

2 cloves garlic, minced

1 Tbsp onion, diced

1 tsp coconut or peanut oil (something good for high temperatures)

salt & pepper to taste

Boil a kettle of water.

Clean your Swiss chard and cut into bite sized pieces.  Place all your chard into a colander and dump kettle of hot water over the chard to wilt it.  Immediately run it under to cold water to prevent it from over cooking, then squeeze out the excess water.  Set aside.

In a frying pan, sauté garlic and onions until translucent and fragrant, approximately 4 minutes.  Add wilted Swiss chard and sauté for another 3 or 5 minutes.
