Mexican Inspired Burgers

Well, it’s not me that was inspired to create this recipe.

Here’s the story: my friend N is on a mission to find a recipe to make the best vegan burger ever.  Last weekend we were cruising the vegan cookbooks and she found The Best Veggie Burgers on the Planet by Joni Marie Newman.  I bought it.  If you’re interested in test driving more of her recipes before investing in the book, Epicurious has posted six of her recipes.  Check them out here.

With few ingredients in the house and a desire to eat low-fat food, I chose the Ortega Burger on page 124.  It had good flavour and great texture; I can’t wait to try more of these burgers.

Ortega Burger

1 cup TVP granules

1 cup water

2 Tbsp taco seasoning (see homemade recipe below)

1/2 cup vital wheat gluten flour

1/2 cup your favourite salsa

1 Tbsp hot sauce

Bring water to a boil, pour over TVP granules and allow to cool.

Mix in taco seasoning, then mix in vital wheat gluten flour, salsa and hot sauce.  Let sit for at least 20 minutes either on the counter or in the fridge until ready to serve.

Preheat oven to 350º when you’re ready to start cooking your burgers.  Line a baking sheet with parchment paper.

Form into 4 patties.

Bake uncovered for 15 minutes on each side or until just crisp on the outside.

Taco Seasoning

1 Tbsp garlic powder

1 Tbsp onion powder

1 Tbsp sugar

1 Tbsp ground cumin

1 Tbsp paprika

2 Tbsp chili powder

1/2 tsp salt

Place all ingredients in a small airtight container and shake vigorously.

Two tablespoons of this mix roughly equals one packet of store bought seasoning, just with a lot less salt.
