Pumpkin Hummus

Pumpkin hummus makes all other forms of hummus look like a skill testing kitchen concoction.

First, I would like to make a confession: I have a bread addiction, as a result I like anything that gives me an excuse to eat bread.

Pumpkin hummus can be enjoyed with carrots, cucumbers, and other party favourite vegetables but it is incredibly excellent on crackers, sliced bread, or wrapped up in an Ezekiel wrap with some extra cilantro.

Pumpkin Hummus

2 Tbsp tahini

2 Tbsp lemon juice

1 tsp cumin

1 tsp olive oil (leave this out for a fat free hummus)

1/4 tsp sea salt

1/4 tsp ground pepper

15 oz canned pumpkin (not pie filling, just plain canned pumpkin)

2 Tbsp cilantro, chopped

Take out a bowl.

Put everything in the bowl.



How easy was that?!  So easy that you’ll almost feel guilty when your friends talk about how fancy pumpkin hummus is and how amazingly creative you are.  Almost.
